| If you listen to ESPN Radio's Bob Valvano on GameNight's Clubhouse Cuisine segment, you know he likes to collect recipes. Here's not one, but two recipes from the Larry Holmes Ringside Restaurant in Easton, Pennsylvania:
Larry Holmes' Picante Caliente Chili
Ingredients
1 lb ground beef
1 lb cubed beef tips
1 lb sliced sausage
1 qt crushed tomatoes
1 qt tomato puree
3 cups red kidney beans with liquid
1/2 cup diced onion
1/2 cup diced sweet peppers
1 tbs. oregano
1 tbs basil
1 tbs parsley
2 tbs roasted garlic
1/2 chili powder
1 tbs crushed red pepper
1 tbs onion powder
1 tbs cayenne pepper
Procedure:
Brown beef and sausage in large stock pot; remove meats and drain; saute onions and peppers in same pot with 1 tbs olive oil until tender; return meats to pan, add all seasonings; add tomato puree and crushed tomatoes; heat mixture to boiling and add kidney beans with liquid; simmer for two hours; serve with sour cream, and cheddar cheese.
Larry Holmes' Easton Assassin Cheeseburger
Ingedients:
1 lb ground beef
1 medium onion
1/2 lb swiss cheese
4 tbs thousand island dressing
lettuce and tomato
Procedure:
1. Form 1/4 lb hamburger pattie.
2. Saute thinly sliced onion in oil.
3. Cook burger in frypan, about 5-7 minutes per side.
4. After both sides cooked, place slice of swiss cheese atop the burger, and cover the pan, for about 35-45 seconds until cheese melts.
5. Spread 1 tbs dressing on slice of rye toast. Cover other slice of toast with lettuce, tomato, burger pattie and onions.
6. Assemble and enjoy!
